The Slow Cooker, or CrockPot is one of my passions... as of this writing, I have 7 crockpots in my kitchen... and I use them. All of them. There is so much you can do in these wondrous machines! ;-) They're a huge part of my One Day Food Prep, too!
This recipe is a great base for so many more! Use the chicken
from this in tacos, wraps, stuffed tomatoes, egg muffins and more!
Chelle's Slow Cooker
Chicken
INGREDIENTS:
3 lbs raw chicken breast
1 cup low-sodium chicken broth*
1 tsp Mrs Dash Garlic and Herb
DIRECTIONS:
Place chicken breasts in slow-cooker, pour in broth and sprinkle the Mrs
Dash over the chicken. Cover and cook on high 3 hours or until meat shreds
easily.
Allow to cool slightly, then remove chicken to a container and shred by
pulling two forks across the meat in opposite directions.
Place shredded meat in air-tight container, adding ½ cup of slow-cooker
liquid to keep it moist.
Tips: For easy cleanup, utilize a slow-cooker liner. Ziploc brand
makes a great one that’s available in most large stores.
*I recommend Pacific Natural or Imagine Foods brands – 80 mg of sodium per
cup
